This rosato is 100% Perricone, a rare local grape that feels deeply tied to this northwestern corner of the island. After just 3 months, it’s bottled with a little unfermented must, which sparks a secondary fermentation right in the bottle and gives it that beautiful, raw energy.

Released without disgorgement, this is the kind of sparkling rosato that feels alive the second it hits the glass. It pours a hazy magenta with a rustic edge, showing off crunchy red berries, a little raspberry yogurt tang, lime zest, wild herbs, and dried red and purple florals. There’s a lovely mineral streak running through it all that keeps everything tight, lifted, and seriously refreshing.
