NV Cyril Zangs Ciderman, 330ml

Cyril makes his ciders from a blend of no less that 69 different species of apples, from trees up to 60 years-old all surrounding Glos, in Calvados. All apples are handpicked, and they are allowed to continue to ripen in his barn for up to 6 more weeks. The apples are grated, then pressed, and spend 6 months fermenting, and age a further 3 months in bottle. Pair this sweet, bitter, tannic off-dry cider with Coquilles Saint-Jacques.
