2025 Cati Ribot Cambuix, 1L
Cati Ribot makes natural wines in Mallorca, including what’s believed to be the world’s only varietal Escursac. Cambuix means “bedhead” in Mallorquin, a name that came about in 2020 after a nasty storm tore through the vineyard near the end of harvest, leaving vines and broken branches scattered everywhere. A friend took one look and said it reminded them of someone who’d just rolled out of bed. The name stuck.
The fruit comes from Cati’s Son Llebre vineyard in Santa Margalida, in northeast Mallorca, where iron-rich, clay-calcareous soils known as Cal Vermell give the wines their sense of place. She farms organically and biodynamically, with a flock of rare red-skinned Mallorquin sheep keeping the cover crops in check through the cooler months. A third-generation grower, Cati took over her father’s bodega in 2019 after training as a sommelier in Barcelona, commuting daily on the first flight out of Palma and the last one home. Since then, she’s ditched sulfur additions in the cellar and begun replacing Chardonnay and Cabernet with native Mallorcan varieties better suited to the island’s heat and drought.
Cambuix is bottled without added sulfur, filtration, or stabilization. It’s a pink with a little personality, made with a light touch and a strong sense of place. A fun way to get to know Mallorca on its own terms, without trying to be anywhere else.
