'Grapes were crushed into a bin and left to ferment with once daily punchdowns. After eleven days the grapes were pressed and settled juice was moved to old French oak barrels to complete fermentation, including full malolactic, which finished in early-summer 2025. In September the wine was racked off its lees and bottled without fining or filtration.
