2025 Las Jaras 'Slipper Sippers' Nouveau, 750ml

The first wine of the vintage for Las Jaras is always Slipper Sippers. The nouveau style of winemaking originated in Beaujolais, just south of Burgundy, where wines from Gamay Noir are produced using carbonic maceration. In this technique, open-top tanks inertized with carbon dioxide are filled with whole-cluster grapes and sealed for several days. Mid-20th-century wine chemist and natural winemaker Jules Chauvet pioneered this approach to create light, fruity, and delicious wines. Building on his method, the technique has since evolved into something uniquely characteristic of Las Jaras.
