2021 Milan Nestarec 'Umami', 750ml

Milan Nestarec is normalizing, or re-normalizing, the practice of authenticity and quality in Czech wine production. Based in the wine-making village of Velké Bílovice and born to a winemaking family, Milan found the art of wine early on. A childhood spent tending to the vineyards alongside his father (whose experience includes years of working in German wineries) were formative in his appreciation and understanding of wine as an active expression of experience. Milan says that his project is not a winery but rather “ideas that just happen to be represented through wine. I'm not selling wine. I'm serving a world view. Using wine as a medium. I could have chosen another one, but this one is so fun. And social.” Nestarec’s vineyards are free of herbicides, pesticides, synthetic fertilizers, and systemic treats - not because it’s sexy and it sells, but because it is normal. Milan and his family choose this approach because it’s simple, it’s what’s best for the vineyard, and it’s the best way to develop expression with clarity.
