2023 Behemoth 'Sweet Pea' NY, 750ml

Behemoth is a tiny farm winery in the Finger Lakes of New York.

The work of Ian Thorsen-McCarthy, and countless friends, the wines are the product of a commitment to organic farming and foraging, spontaneous fermentation, and additive-free cellar work.

"Sweet Pea: Skin contact Cayuga white and Geneva white #2 - both excellent Cornell-developed hybrids. Destemmed, 8 days on the skins. About 5% of the total blend is black currants, which explains the color, and some of that cassis flavor. This is a still wine, but might give a little hiss when you pop the crown cap." - Ian McCarthy
