NV Luis Perez Fino Caberrubia Jerez Saca VIII, 750ml

The Caberrubia bottling, a "Selección de Añadas," comes from 40-year-old goblet-trained Palomino Fino vines at the Pago de Carrascal and El Corregidor estate. It follows the tradition of 19th-century non-vintage Finos, with lightly pressed Palmas fermented naturally in cask.

For Saca VII, Luis expanded the selection to 17 botas, primarily from the 2017, 2018, and 2019 vintages, with small amounts from earlier years. This blend aims for a style that captures the vineyard's inland character, offering roundness and concentration, yet maintains the elegance and finesse of previous releases. Since it doesn’t reach the 15º alcohol minimum for a Fino under D.O. Jerez-Xérès-Sherry regulations, it will be released under white wine legislation instead.
