C. Cassis Barrel Aged Blackcurrant Liquer No. 3 Green Wax, 375ml

Botanical blackcurrant aperitif aged #3 char ex-whiskey casks (this release was finished in a Coppersea Rye barrel), verging into tawny port territory. The process brings the cardamom up front, along with toasted spice undertones from the wood, and a roasted cherry fullness. The barrels allow for light oxidation which gives this liqueur a nutty quality and caramelized salinity. -C. Cassis
