"Meet your Neighbors: A piquette of all of the grape varieties I worked with in '23 - all hybrids and natives: Concord, Catawba, Cayuga white, and Geneva white #2. There is also a little hibiscus to get the acid where I wanted it, and just enough local honey for re-fermentation in the bottle. I was very pleased (and surprised) when the alcohol came back from the lab at 7.7%. Apparently I don't press my grapes hard enough. The water comes from the a spring a mile or so south of me in a state forest. It’s the best water I’ve ever had." - Ian McCarthy
