"Prologue is a blend of cider made across our first four harvest years. Bottled Col Fondo with fresh apple juice. A similar blend of apples is used each year. The annual process continues until year seven, when we achieve the Solera, and again each year, a perpetual layering and blending. Wild fermented with native yeast, unfined and unfiltered.
