In 2000, when Thomas took over his family's estate he brought focus back to the vineyards and started the process of converting to organic farming. Farming organically in a chilly, northern location like Champagne is no easy task in a region where vine diseases can develop quickly. During every step of the process, Thomas takes on a supporting role to the vine's health and always thoughtfully considers which of his practices are highlighting the traits of his parcels. Above all, he just wants the champagnes to express their special sense of place in the glass. 

The Perseval family has been bottling their own wine from a small plot in the village of Chamery since the 1980’s. Perseval was a part of a subculture of producers that believe, like any other still wine, sparkling wine should be a reflection of the vineyard and not just the estate. His careful work in the vineyards and cellar have paid off. The wines speak with energy, intention, thrilling minerality.
